Interrupting your holiday baking feed with this 🔥 Thai Coconut Curry Noodle Soup 🔥🤗🙌🏻🙆🏻‍♀️⁣

As easy as it is delicious, I whipped this up in stories the other day with ingredients I had on hand already, and you might too (red curry paste, coconut milk, chicken stock, peanut butter, tofu…) The beauty of this soup is that the broth is so insanely delicious, you can add almost anything you want. Chopped zucchini or cabbage, ribbons of carrot or broccoli florets would be perfect. I went with tofu, but chicken, shrimp, or thin slices of beef are delicious too. Just sauté the protein in the curry paste before adding the stock & coconut milk. Or make it for #meatlessmonday with veggie stock and use soy sauce in place of fish sauce.⁣

After some requests, I pinned the simple process in highlights for you and here’s the quick recipe: ⁣
⁣
Thai Coconut Curry Noodle Soup (makes 3-4 servings)⁣
⁣
• 2 tablespoons of neutral oil⁣
• 3 tablespoons Thai red curry paste (use less if you’re concerned about the level of heat)⁣
• 1 tbsp each minced garlic & fresh ginger⁣
• 3 cups chicken stock (or veggie stock)⁣
• 2 cups full fat coconut milk⁣
• 2 tablespoons fish sauce⁣
• 1/4 cup of smooth peanut butter⁣
• juice from ½ lime⁣
• extra firm tofu, cut into bite-sized pieces⁣
• rice stick noodles ⁣
⁣
To serve:⁣
fresh cilantro⁣
thinly sliced red onion⁣
chopped roasted peanuts⁣
extra wedges of lime ⁣
bean sprouts (if you have them)⁣
⁣
Heat the oil in a pot and fry the curry paste with the ginger and garlic until fragrant and darker in colour. Add the chicken stock, coconut milk, fish sauce, peanut butter, lime juice and let simmer for 10-15 minutes to allow the flavours to get cozy. Taste and adjust seasoning, adding water if it’s too salty (I added ½ cup). Add the tofu and simmer gently for a few more minutes before ladling over cooked rice noodles. Top with any or all of what’s suggested above and slurp away!⁣

I had so many questions about the salter butter caramel-rippled ‘mallows in my last post, that I smacked myself for not sharing the how-to 🤦🏻‍♀️, but I got you this time:⁣
⁣
Step 1. Make the basic marshmallow recipe from @butterbakedgoods (you don’t even need a candy thermometer - these are super easy!)⁣
⁣
Step 2. Commence with dynamite flavour riffs! To make these pillowy mocha bites, whisk 3 tbsp cacao powder (I use @pranasnacks) and 2 tbsp instant espresso powder with ¼ cup boiling water until smooth, then add it to the marshmallow mixture after the sugar syrup. Finish as per ‘mallow recipe. A big sweet thank you kiss 😘 to @marshandmallow for the brilliant tip to toss the cut pieces in a blend of cornstarch and more cacao powder (I used equal parts) to amp up the chocolatey flavah 👏🏻🙌🏻👌🏻⁣

These beauties are packed with sweet apples (3 in total!), then flavoured with flecks of black tea and a purposeful amount of warming spices (cardamom, cinnamon, ginger, anise, clove, black pepper). You see where I’m going, right?⁣⁣

My first thought was to call them Apple Chai Muffins, but since technically the word “chai” means “tea” and doesn’t refer to the blend of spices used, I didn’t want to perpetuate the misnomer. ⁣⁣

“Apple Masala Chai Muffins” has a nice ring, or maybe “Masala Chai Apple Muffins”? Or maybe just “Spiced Apple Chai Muffins?”⁣⁣

Easy, hearty, and delicious, this is one of our all-time favourite soups. Tiny pasta shapes like mini shells – or in this case acini di pepe – are amusing for all and and thicken the soup just the perfect amount, while carrots, tomatoes, kale and white beans dutifully check the veggie box ✅⁣

We’ve been making these affectionately named brownie bites as healthy treats for over 5 years now, and they’re still in steady demand. I haven’t changed the base recipe at all but lately, I’ve had some ideas about adding espresso powder with extra cacao nibs to get that chocolate-covered-coffee-bean bittersweet crunch, and also want to try a s’mores version with mini marshmallows and graham cracker pieces. With the holidays around the corner, a spicy gingerbread version is on my mind too 🤔⁣

Do you already make something similar to these “bliss balls?” What’s your favourite flavour? I would love more ideas to try! ⁣

Here’s our family’s recipe:⁣
⁣
BROWNIE BITES⁣
⁣
Ingredients⁣
• 1-½ cups pitted Medjool dates, packed tightly (if dry, soak in warm water for 10 minutes then drain)⁣
• 4 tbsp unsweetened cocoa powder or raw cacao powder⁣
• 1 tsp vanilla extract⁣
• ⅛ tsp fine sea salt⁣
• ½ - 1 cup large flake rolled oats (use more if your dates are very soft; can also replace with nuts)⁣
• ¼ cup shredded coconut, unsweetened⁣
Optional add-ins:⁣
• 2 tbsp chia seeds⁣
• 2-3 tbsp hemp hearts⁣
• 1 scoop vanilla protein powder (I use a dairy-free one that is sweetened with Stevia)⁣
• ¼ cup cacao nibs⁣
Instructions⁣
Put all ingredients (except the cacao nibs, if using) in a powerful food processor fitted with a sharp blade. Pulse a few times to chop the ingredients, then process just until a dough begins to form. Add the cacao nibs then process a few more seconds to combine.Scoop out the dough and roll into uniform balls, or roll out between layers of parchment paper and cut into squares. Place in an airtight container and store in the fridge or freezer.⁣
